Why do we love this wine?
Hand picked fruit, whole bunch press to juice, and fermented with wild yeast. Extended ageing on lees in 30% New French Oak. This is stylish wine to be sure. Round and shapely like it's regional compatriots, but with a certain slick French styling that shows off a bit of acidity and mineral complexity. That time in barrel provides a subtle backbone of cedar and structure, completing a lovely drink that exudes freshness but certainly won't fade away with a bit of cellar time.
