Aligote! The unsung ‘other’ white wine of Burgundy. It lives a little in chardonnay’s enormous shadow but it is in its own right a stunning variety. This has an exciting electricity to it - zippy acid lights up the mouth. Taste green apple and chalky minerality, plus a whiff of smoke or struck match. A little spicy. A little peppery. A little herbal. There is heaps on offer here. The pep and pick-up of the acidity means it pairs perfectly with fatty (read: delicious) things. Think soft cheese, pork belly, lamb... This is aligote in all its complex and more-than-an-understudy glory, and we’re here to sing it’s praises loudly.
