No doubt this would have had a chablis-like sensibility to it in its youth, but the layers have begun to unfurl and reveal something oh-so-much-more special. Ripe mango and yellow nectarines dance with a star anise spice and notes of vanilla infused panna cotta. There's a touch of cultured butter and freshly baked croissant to the aroma, which will keep you coming back for more. The texture is bold and unashamed, while still holding tightly onto that fresh Yarra Valley acidity. There's a sense that these wines are reluctantly released from the cellar, but the waiting game always pays off when you sink your teeth into it. This is a remarkable wine, and we've only managed to get a small amount to share with you.
