Why do we love this wine?
There is no doubt that Tasmania is producing some of Australia's most revered sparkling wines and this traditional method NV makes for another stellar example. Tassie's cooler climate allows for grapes to reach maturity (building up the beautiful flavours we love) while still maintaining the driving acidity needed to produce sparkling wine. Couple these factors with extended ageing on lees and you've got all the reasons to be needing no reason at all to pop some corks.
