Simple winemaking is usually the best plan when it comes to Clare Valley riesling. You take high quality fruit, press it gently, ferment at a cool temperature and then let it rest. If you want to work in a bit of texture, as is the case with this one here, simply leave the wine on its lees for a couple of months. That’s it...that’s all there is to do. If you try to do anything more clever than that, it ends up being clunky. This rizz is mouthwateringly crisp, with flavours of lime, elderflower, grapefruit and quince. It doesn’t need to be any more complicated than that!

When it comes to the legendary producer Claymore, I always think - come for the reds, and stay for the riesling. They have a few rieslings in their collection, all excellent examples of what Clare Valley does best. This beauty is all about the floral, sherbet-y nose with a few funky notes too. It follows with a dry and textural palate that is pithy and citric - vibrant and classic. It has a super-dry finish and my notes say “it’s pretty bloody delicious”.

When we find a treasure that our mofos love, we keep going back for more. Here’s the fourth vintage of this Clare riesling that we’ve featured and the first three were a roaring success. It comes from one of the rising stars of the region and hits all the notes you’ve come to expect. It’s bursting with citrus, minerality and texture. Riesling from Clare is renowned for its bracing acid line carried forth with vivid fruit. This one delivers all that and then some. Load up the cellar before it’s gone!

While there's enough elegance in this medium-bodied 2020 drop to be enjoyed on its own from the comfort of your favourite chair (or on the floor in your pjs - we don't judge) it pairs so beautifully with fish or even a zesty Thai curry that you'll be trotting it out for almost every meal. Looking good for its age with plenty of vibrancy!
