The point is mofo, we got there. We all know aged cabernet can be one of those unicorns, hard to find, but priceless when you do. Our producers have done the cellaring for you, so now all that’s left to do is crack these babies open (although we suggest giving them some airing time before diving in).

Rarely do you open wine when it’s in the perfect drinking window, but when you do, you really know about it. With almost a decade in the bottle, its tannins have softened to perfection. Robust and vibrant dark berries are still at the core, but the layers are opening up, offering roasted notes, cigar box, olive tapenade and mineral warmth. Cabernet sauvignon with perfectly aged, fine tannins is genuinely such a pleasure; it makes you wonder why we don’t always wait (nearly) ten years.

Elegance exemplified. With just over 10 years in the rear-view mirror, this beautiful cabernet has found itself right in the 'goldilocks zone', not too young, not too old, juuuuust right.
Margaret River rarely has a challenging vintage but the 2014 had nothing short of exceptional growing conditions, particularly for cabernet. Beautifully balanced, wonderfully vibrant and patiently matured, this is a really special drop. Both the bouquet and the palate are chocker-block-full of ripe cassis, blackberry, bay leaf and countless other varietal characteristics. Fine-grained tannins and a vibrant acidic structure close out proceedings and push through for a lingering finish with discernible hints of sweet oak. A classy wine with a beautiful mouthfeel and exemplary fruit concentration. You won't be disappointed.

We love to drag something out of the cellar, dust it off, and have it absolutely blow us away. There's no real mystery to it: great winemaking creates wines that last. This is opulent, luscious, deep, brooding, and still exuding freshness and lift. Its velvety on the palate with an intense dark fruit medley of plums, cherries, and blackberries. That fruit profile persists through a lingering finish, balanced by subtle oak and spritely acidity. Nearly ten years has done this wine wonders - mature and balanced but still packing a punch.

It's exactly what you'd expect from a vibrant Marg drop too - with regional flavours spanning bay leaf, to black olive and even a touch of liquorice to round out the red current characters. A subtle oakiness born from a lengthy 14 months stint in 20% new French oak is the perfect finishing touch. Perfect now or until 2030.

This is one of those bottles you keep coming back to because it delivers each and every time and always stumps people when you tell them how much you paid. Cool and gentle fermentations allow a more controlled extraction of colour, flavour and tannin while 10 months of maturation in French oak finishes off the wine with all the trimming's we love. The hardest decision to make now is what food to pair with it, take our advice, this has Sunday roast written all over it.
