Why do we love this whisky?
“I would prefer barley to be fed to the pigs than it be used to turn men into swine” - Lady Jane Franklin, 1838. These few words saw the distillation of spirits become outlawed in Tasmania that same year… Fast forward to 1989 while trout fishing in the Highlands of Tasmania, the proclaimed “Godfather of Australian craft whisky”, Bill Lark, looked out over fields of barley and pondered why nobody was making local malt whisky. A question which, in 1992, saw Lark Distillery become the first Tasmanian single malt spirit producer in 154 years. Since then, Lark has evolved and grown into one of the most notable whisky distillers in the country, and Bill himself became the seventh person outside of Scotland or Ireland to be inducted into the Whisky Hall of Fame.
